The taste is out of this world, homemade blueberry pancakes are super easy to make from scratch. You can fancify pancakes all you want, but can you really ever deny a butter-soaked blueberry pancake laced with maple syrup and dripping hot.
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk (or regular milk)
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup fresh or frozen blueberries
- Butter or oil for cooking
Instructions:
- Mix Dry Ingredients: In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, whisk the buttermilk, egg, and melted butter until smooth.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay). Do not overmix.
- Add Blueberries: Gently fold in the blueberries.
- Cook Pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2 minutes or until golden brown.
- Serve: Serve warm with maple syrup, extra blueberries, or a dusting of powdered sugar.
