Homemade Blueberry Pancake

The taste is out of this world, homemade blueberry pancakes are super easy to make from scratch. You can fancify pancakes all you want, but can you really ever deny a butter-soaked blueberry pancake laced with maple syrup and dripping hot.

 

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk (or regular milk)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup fresh or frozen blueberries
  • Butter or oil for cooking

Instructions:

  1. Mix Dry Ingredients: In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Combine Wet Ingredients: In another bowl, whisk the buttermilk, egg, and melted butter until smooth.
  3. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay). Do not overmix.
  4. Add Blueberries: Gently fold in the blueberries.
  5. Cook Pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2 minutes or until golden brown.
  6. Serve: Serve warm with maple syrup, extra blueberries, or a dusting of powdered sugar.
